We don't run a catalog. Each month we release one — occasionally two — whole Full Blood Wagyu carcasses from our own herd, fully documented from registration certificate to optical marbling scan. When a lot is claimed, it's gone.
Every animal is born, raised, and finished on one Ohio ranch and registered with the American Wagyu Association. You see the full pedigree before you buy.
Each carcass is graded by MIJ optical marbling scan — marbling percentage, fineness, and ribeye geometry measured, not estimated.
We sell the whole carcass to qualified buyers — restaurants, distributors, and licensed exporters — so the animal stays whole and fully traceable.
